Permanent / Full Time – 40 hours per week

Salary - £30,051.00 per annum plus Serco benefits 

 

Main purpose:

 

We are looking for a Chef to join us at HMP Dovegate for the supervision of prisoners/kitchen workers - a Category B adult male facility near Uttoxeter, Staffordshire where we care for up to 1160 male adult prisoners over the age of 21 serving a range of sentences including trial, remand, those awaiting sentence and convicted men serving long and short-term sentences.

 

This exciting opportunity is well suited to an experienced Chef who is looking for a role with no split shifts (guaranteed finish time 16:45pm) and enjoys working as part of a committed team. You will assist the Catering Manager in the delivery of catering services to the establishment and comply with all relevant Health & Safety and Food Safety Regulations, legislation, and guidelines. You will prepare varied and healthy menus for residents to include special diets, special events and religious events, whilst also keeping abreast of trends and developments in the catering industry such as menus and consumer tastes.

 

Main accountabilities:

 

  •  To assist the Catering & Retail Manager and Chef Supervisor in the delivery of catering services to the whole establishment and complies with all relevant Health & Safety and Food Safety Regulations, legislation, and guidelines.
  • To provide varied and healthy menus for residents to include special diets, special events and religious events. Keeping abreast of trends and developments in the catering industry such as menus, consumer tastes.
  • To ensure the security and food safety of all foodstuffs is maintained during delivery, storage and distribution within the kitchen area.
  • To record and document all relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP and Company Policies
  • To provide training and supervision to kitchen workers.
  • To perform random Quality Checks on serveries’ before, during and after mealtimes.
  • Reacting to complaint issues and trends, with a cohesive approach along with the catering team.
  • To work shift work and weekends when operationally required.
  • To assist in resident movements and searches to and from the kitchen.
  • To train for and carry out any other work reasonably acceptable within the capabilities of the post holder.

 

What you will need to do the role

 

  • City & Guilds 706/1 & 2 or equivalent NVQ or similar in Food preparation and Production.
  • Literacy and Numeracy Level 2 or equivalent GCSE.
  • Food Safety level 3.
  • Awareness of Hazard Analysis and Critical Control Point (HACCP).
  • Awareness of Allergen Control within Catering. 
  • A strong commitment to the rehabilitation of residents.
  • Basic computer skills including knowledge of Excel, Word and Outlook applications.
  • Good supervisory skills with strong interpersonal skills, including good oral and written communication.
  • Able to demonstrate resilience with a basic understanding of both conflict resolution and de-escalation and risk and conflict management.
  • Commitment to working effectively in a socially diverse environment, with a good team ethic.
  • Excellent time management.
  • Assertive, creative and progressive along with good problem-solving skills.
  • Working in a people centered environment.
  • Good working knowledge of a large catering operation, ideally with a minimum of 3 years’ experience in a similar post preferably within a custodial environment.
